copycat texas "cow patties"

Hubby and I went to a "mom and pop" restaurant in our small town this morning and this was on the menu. The whimsical name caught my attention, but the ingredients really made me curious so I ordered one.........OMGoodness. These will make a rabbit hug a dawg!!! I came home and looked online for a cornmeal waffle recipe which I found at Southern Living. The restaurant didn't add the sour cream, but I think it would be good. I know it sounds like a heart attack on a plate so you wouldn't want to eat this very often, but if you try it, I think you will like it! ***The waffle recipe said that these ingredients make twelve 4 inch waffles, but I have not tried it yet, so I don't know for sure.

Ingredients
- WAFFLE:
- 1 1/2 cups corn meal
- 1/2 cup flour
- 2 1/2 teaspoons baking powder
- 2 tablespoons sugar
- 3/4 teaspoon salt
- 1 - large egg, beaten
- 1/1/2 cup milk
- 1/4 cup butter, melted
- TOPPINGS:
- 1 - onion, chopped
- ... - shredded cheddar cheese
- ... - jalapeno slices
- ... - sour cream
- 2 - large cans chili (not hot dog sauce) with or without beans as per preference

Step 1WAFFLE: Stir together first 5 ingredients in a large bowl. Stir together egg, milk and butter; add to cornmeal mixture, stirring just until dry ingredients are moistened. Bake in a preheated, oiled waffle iron just until crisp.

Step 2Place waffle on a plate and spread chili to cover top of waffle. Top chili with any combination of the following to taste: cheese, onion, jalapeno slices, and sour cream.
