In the winter, a stick-to-your-bones meal is always welcome, and this kielbasa potato bake is one of those. It's easy to prepare and packs a punch of savory flavor. The sausage adds a smokiness, while the potatoes are nice and tender. The combination of seasonings pairs well with the meat and potatoes. And, you can't go wrong adding cheese to pretty much anything. Comfort food to the max.

    (12-14 ounce) packages polska kielbasa
  • 1/2 md
    sweet or white onion, thinly sliced
  • 5 lg
    russet potatoes, peeled and cut into 1/2-inch cubes
  • 1 tsp
    salt
  • 1 tsp
    pepper
  • 1 tsp
    onion powder
  • 1 Tbsp
    garlic powder
  • 3 Tbsp
    chopped fresh parsley (or 1 1/2 teaspoons dried)
  • 1/2 tsp
    paprika
  • 2 Tbsp
    olive oil
  • 8 oz
    sharp cheddar cheese, shredded

How To Make comforting cheesy kielbasa and potato bake

  • Kielbasa cut into pieces.

    Preheat the oven to 400 degrees F. Spray a 9" X 13" pan with cooking spray on the bottom and sides. Cut the kielbasa in half length-wise and then cut into 1/2 inch slices. Place in a large bowl.
  • Sliced onions added to the bowl.

  • Diced potatoes added to the bowl.

  • Seasonings added to the pot of ingredients.

    Add remaining ingredients except for the cheese and mix well.
  • Kielbasa and potatoes poured into a greased baking dish.

    Transfer mixture to the prepared pan and spread it out as evenly as possible.
  • Casserole baking in the oven.

    Bake uncovered for 35 to 45 minutes, or until potatoes are fork tender, stirring every 10 minutes. When the potatoes are done and tender, turn the oven off and sprinkle the shredded cheddar over the top. Return the pan to the oven for an additional 5 minutes, or until cheese is melted.
