Ingredients

- THE SAUCE
- 2 tablespoons sweet butter, unsalted
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour (for thickening)
- 1 1/2 cups beef stock
- 8 ounces fresh or canned mushrooms, sliced
- 6 ounces cream cheese, softened
- 1/4 cup heavy cream
- 1/4 cup whole milk
- 2 teaspoons Worcestershire sauce
- ADDITIONAL OPTIONS
- dehydrated onions
- cumin
- Kosher salt, fine grind
- white pepper, freshly ground
- Parmesan cheese, grated
- lemon juice, for brightness
- THE PROTEIN
- 1 pound beef roast, thinly sliced

Step 2I prefer beef stock over broth; however, if you use broth, make sure it is a low-sodium variety (broths tend to be high in sodium).

Step 3The Worcestershire sauce in this recipe creates a nice earthy depth to the sauce. If, however, you do not like it because of its use of anchovies, I have a homemade version that tastes great and no anchovies. Step 4I did add something that I thought really added to the overall flavor of the finished dish. I precooked about 4 ounces of ground Italian sausage and added it to the dish when I added the cream and milk. It was a subtle undertone to the recipe that went over well with my guests.

Step 5Gather your Ingredients (mise en place).

Step 6In a skillet, melt the butter over medium heat, then add the chopped onion.

Step 7Cook until soft and translucent, about 5 - 7 minutes.

Step 8Stir in the minced garlic and cook for another minute until fragrant.

Step 9Add the flour and stir constantly for about 1 minute to cook out the raw flour taste.

Step 10At this point you can add some additional spices, like the ones I recommended, or others of your choice.

Step 11Add the thinly sliced beef.

Step 12Slowly cook over medium-low heat until the beef is cooked through and starting to get tender, about 10 – 12 minutes. Then add the beef stock and stir to combine.

Step 13Add the mushrooms.

Step 14Cook at a simmer, stirring occasionally, for about 5 – 7 minutes.

Step 15Add the cream cheese in small cubes, stir and allow to melt into the sauce, about 2 – 3 minutes.

Step 16Add the cream, milk, and Worcestershire sauce, then stir to combine.

Step 17Allow to lightly simmer, stirring occasionally, until heated through and thickened, about 5 – 7 minutes.

Step 18While simmering do a final taste test for proper seasoning, and adjust as needed.

Step 20Serve over rice, egg noodles, or even taters. Enjoy.
