Ingredients For city chicken

2 lbveal, cut into 1 1/2 inch cubes

2/3 cfine cracker crumbs ( ritz )

1 1/2 tspsalt

1 tsppaprika
-
3/4 tsppoultry seasoning

1slightly beaten egg
-
2 Tbspmilk
-
3 Tbspshortening
-
1chicken bouillon cube
-
1/2 cboiling water
-
6short skewers
How To Make city chicken

1Thread veal cubes onto 6 short skewers. Combine crumbs, salt, paprika, and poultry seasoning. Combine egg and milk.

2Dip meat into egg mixture, then into crumbs. Brown slowly on all sides in hot shortening. Place in baking dish

3Dissolve bouillon cube in boiling water; add to meat. Cover and bake at 350 F for 45 minutes. Uncover; bake 30 minutes longer.
