When our girls were home one of our Christmas tradition was the "Christmas" goose. A goose is all dark meat and we loved that. I don't know how many people fix a Christmas goose any more but I thought you might enjoy the recipe.

Ingredients
- 1 large goose, rinse and pat dry with paper towels
- 1 large apple,peeled and cut into chunks
- 1 large potato, peeled and cut into chunks
- 1 medium onion, peeled and cut into chunks
- 6-8 slices hickory smoked bacon
- GOOSE HAVEN SAUCE
- 3/4 cup honey
- 1/2 cup red wine
- 1/2 teaspoon worcestershire sauce
- 1 - shot brandy, optional
- 1/2 cup brown sugar, packed
How To Make christmas goose

Step 1Pre-heat oven to 300 degrees. To make the Goose Haven Sauce: combine all ingredients in small bowl and stir briskly for 2 minutes. Set aside.

Step 2Rub cavity generously with table salt, optional. Peel the apple, potato and onion cut into chunks and place in cavity. Cover goose with bacon slices. Place goose on rack in roaster, place roaster in center of the oven. Place in oven and cook 1/2 hour per pound of goose. During the last hour of baking time baste ever 15 minutes with Goose Haven Sauce.

Step 3When goose is done remove from oven and let stand for 15 minutes before slicing. Heat remaining sauce and serve with goose.
