chorizo hot pot
Sausages are favorites in many parts of the world. Argentinian chorizo are a little different from others known as chorizo as these include red wine. You may have to substitute Italian sausage or another good quality pork sausage. This would be great on a cold winter's night, but will still be delicious in the summer. No reason why it couldn't be cooked in a slow cooker.

Ingredients
- 4 - argentinian chorizo (italian sausage can be subbed)
- 1 large onion, sliced
- 1 clove garlic, chopped
- 1 - red or green pepper, seeded and sliced
- 1/2 tablespoon tomato paste
- 1/2 cup white wine
- 2 large tomatoes, chopped
- 1 - bay leaf
- 1/2 tablespoon oregano, dried
- 1/2 tablespoon paprika
- - salt and pepper, to taste
How To Make chorizo hot pot

Step 1Heat olive oil in a pan and fry the sausages. Turn as they are cooking so they start to brown somewhat on each side.

Step 2Add onions, garlic and peppers. Lower heat and cook for 5 minutes, or until they start to soften.

Step 3Add tomato paste. Stir and cook for a couple minutes, then add wine and simmer for another minute.

Step 4Add chopped tomatoes, and the rest of the ingredients. Cover and cook for about 20 to 25 minutes.

Step 5Serve with mashed potatoes or crusty bread.
