chorizo chili mac

This is an easy recipe to make and it is very good! My grandchildren helped create this recipe... so I think it is "kid friendly". I like incorporating vegetables into my recipes to help get our daily intake of vegetables into our diets. Adding vegetables also boost the volume of the food and give added flavor and texture. Ingredients

  • PASTA
  • 2 pounds macaroni, elbow (any pasta will work)
  • CHORIZO
  • 2 pounds chorizo (mexican sausage, mild or medium
  • 1 large onion (diced)
  • 10 cloves garlic (whole or diced)
  • 2 - yellow crooked neck squash
  • 1 teaspoon ground black pepper
  • 2 teaspoons each: ground cumin,garlic powder
  • 1/4 teaspoon ground cayenne pepper
  • 1 can tomato paste (6ounces)
  • 3 cans water (use tomato paste can to measure)
  • 2 cans black beans
  • 2 cans tomatoes (diced)

How To Make chorizo chili mac

  • Step 1
    1 box or bag (2 pounds) elbow macaroni. Cook elbow macaroni as directed on box.
  • Step 2
    Drain and rinse the pasta in a colander. Set aside.
  • Chorizo, yellow squash, onion, garlic.
    Step 3
    While the elbow macaroni is cooking: In a large skillet, cook the chorizo, onion, garlic and yellow squash until cooked (about 10 minutes).
  • Step 4
    Add the diced tomatoes, tomato paste, water and spices. Simmer 5 minutes.
  • Step 5
    Put some elbow macaroni into bottom of bowls. Scoop Chorizo Sauce mixture on top of elbow Macaroni.
  • Step 6
    Serve! *** You can also add some pasta to the other ingredients, but I prefer not to. *** optional: taco toppings to garnish.
