Go Asian with this inspired skillet chicken and rice dinner. Everything is homemade in this recipe. Fresh ingredients are a must in making great food. Seasoned chicken, bagged frozen peas and carrots, and, of course, jasmine rice. I like using jasmine rice in most of my Asian stuff because it’s sweeter. Low-sodium soy sauce is a must for this recipe as well. This is very easy to make and has very few ingredients.

Ingredients

  • 4 cups jasmine rice
  • 1/2 medium yellow onion, chopped
  • 1 1/2 pounds skinless boneless chicken halves
  • 6 stalks green onions, chopped greens and whites
  • 1/2 teaspoon salt and pepper
  • 1/2 teaspoon garlic powder with parsley
  • 1/2 teaspoon paprika, sweet mild
  • 1/2 teaspoon onion powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon sesame seeds
  • 12 ounces frozen peas, and carrots
  • 2 tablespoons low-sodium soy sauce
  • crispy Asian noodles

How To Make chinese chicken fried rice skillet dinner

  • Step 1
    To a tall-sided nonstick skillet, add 3 tablespoons of olive oil over medium-high heat. Add in chopped onion and a 12-ounce bag of frozen peas and carrots. Stir and break up peas and carrots.
  • Step 2
    Once that is cooked through, set aside. Lay your raw chicken breast on a cutting board and season with garlic, parsley, salt, ginger, paprika, and onion powder. Flip over and put those same herbs on each side.
  • Step 3
    To a small bowl, scrape in mixed vegetables. Set aside. Add in 2 tablespoons more of olive oil or sesame oil. Place seasoned chicken into the skillet, cooking thoroughly on both sides until juices run clear.
  • Step 4
    Once the chicken is done, remove it from the skillet and let it rest on a plate.
  • Step 5
    Place chicken on a clean cutting board and cut or shred into bite-sized pieces.
  • Step 6
    Add cut-up chicken back into the skillet, adding the vegetables with it.

    Add in soy sauce and cooked rice. I used a rice cooker for my rice washing and rinsing it 3 to 4 times, and draining off water.
  • Step 8
    Serve with crunchy noodles on top of each person's serving. You may add a couple of scrambled eggs to your skillet meal. I just didn’t this time. Great protein, though, if you do want it added in.
  • Step 9
    Also top with chopped green onions and sesame seeds as well. Dinner is served.
