We are Italian and love to eat bread with anything.Instead of using white wine you can use 2T butter.

Ingredients

  • 1 pound boneless skinless chicken thighs
  • 5 ounces chorizo (mexican sausage, mild or medium
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 teaspoons minced garlic
  • 1 - red bell pepper
  • 1 teaspoon cinnamon
  • 2 teaspoons sweet smoked paprika
  • 1 teaspoon dried thyme
  • 3 tablespoons white wine
  • 14 1/2 ounces can crushed tomatos
  • 1 cup chicken broth
  • 14 1/2 ounces can chickpeas or white kidney beans
  • 1 - handfull flat leaf parsley
  • - salt and pepper

How To Make chicken & chorizo casserole

  • Step 1
    In a heavy frying pan add olive oil and chorizo fry for 3 to 5 minutes. Stirring occasionally. Transfer chorizo to a plate and set aside. Add chicken to fry pan and fry for 5-8 minutes stirring often till golden brown. Thinly slice onion and red pepper add to pan and cook gently for 10 minutes or till onion is soft. Stir in cinnamon, thyme, paprika and fry for 1 minute till fragrant. Now add wine, tomatoes, broth and stir and simmer for 10-15 minutes or till chicken is tender and sauce is thickend. Add chickpeas ( or white kidney beans) and chorizo simmer for 3 minutes and add chopped parsley. Serve with crusty bread.
