We are Italian and love to eat bread with anything.Instead of using white wine you can use 2T butter.

1 lb
boneless skinless chicken thighs
5 oz
chorizo (mexican sausage, mild or medium
1 Tbsp
olive oil
1 large
onion, diced
2 tsp
minced garlic
red bell pepper
1 tsp
2 tsp
sweet smoked paprika
1 tsp
dried thyme
3 Tbsp
white wine
14 1/2 oz
can crushed tomatos
1 c
chicken broth
14 1/2 oz
can chickpeas or white kidney beans
handfull flat leaf parsley
salt and pepper

How to Make Chicken & Chorizo Casserole


  • 1In a heavy frying pan add olive oil and chorizo fry for 3 to 5 minutes. Stirring occasionally. Transfer chorizo to a plate and set aside. Add chicken to fry pan and fry for 5-8 minutes stirring often till golden brown. Thinly slice onion and red pepper add to pan and cook gently for 10 minutes or till onion is soft. Stir in cinnamon, thyme, paprika and fry for 1 minute till fragrant. Now add wine, tomatoes, broth and stir and simmer for 10-15 minutes or till chicken is tender and sauce is thickend. Add chickpeas ( or white kidney beans) and chorizo simmer for 3 minutes and add chopped parsley. Serve with crusty bread.
