Ingredients
- 3 cups 1/2 inch diced potatoes
- 2 teaspoons olive oil
- 4 - links chicken-apple sausage cut into 1/2 inch pieces
- 3/4 cup yellow onions
- 6 tablespoons chopped green bell peppers
- 2 teaspoons minced garlic
- 1 teaspoon chopped fresh thyme
- 1/2 teaspoon creole seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- fried egg sunny side up
How To Make chicken and apple sausage hash with fried eggs

Step 1In medium saucepan, place potatoes and enough salted water to cover by 1 inch

Step 2Bring to a boil and cook until just tender (8 minutes)

Step 3Drain well/set aside

Step 4In a large skillet, heat the oil over medium-high heat

Step 5Add the sausage3 and cook, stirring, until cooked through (5-6 minutes)

Step 6Remove the sausage with slotted spoon and drain on paper towels

Step 7To the fat pan, add onions and bell peppers and stir well

Step 8Reduce heat and cook, stirring until soft (3 minutes)

Step 9Add the garlic and cook, stirring for 30 seconds

Step 10Add potatoes, thyme, cajun seasoning, salt and pepper

Step 11Stir well

Step 12Reduce heat and cook, stirring occasionally until potatoes turn golden brown (7-8 minutes)

Step 13Return sausage to the pan, stir well and cook until heated through

Step 14Top with a sunny side up egg
