Stove Top


  • 3 c
    1/2 inch diced potatoes
  • 2 tsp
    olive oil
  • 4
    links chicken-apple sausage cut into 1/2 inch pieces
  • 3/4 c
    yellow onions
  • 6 Tbsp
    chopped green bell peppers
  • 2 tsp
    minced garlic
  • 1 tsp
    chopped fresh thyme
  • 1/2 tsp
    creole seasoning
  • 1/4 tsp
  • 1/4 tsp
  • ·
    fried egg sunny side up

How to Make Chicken and Apple Sausage Hash with Fried Eggs


  1. In medium saucepan, place potatoes and enough salted water to cover by 1 inch
  2. Bring to a boil and cook until just tender (8 minutes)
  3. Drain well/set aside
  4. In a large skillet, heat the oil over medium-high heat
  5. Add the sausage3 and cook, stirring, until cooked through (5-6 minutes)
  6. Remove the sausage with slotted spoon and drain on paper towels
  7. To the fat pan, add onions and bell peppers and stir well
  8. Reduce heat and cook, stirring until soft (3 minutes)
  9. Add the garlic and cook, stirring for 30 seconds
  10. Add potatoes, thyme, cajun seasoning, salt and pepper
  11. Stir well
  12. Reduce heat and cook, stirring occasionally until potatoes turn golden brown (7-8 minutes)
  13. Return sausage to the pan, stir well and cook until heated through
  14. Top with a sunny side up egg
