Ingredients For chicken and apple sausage hash with fried eggs

3 c1/2 inch diced potatoes

2 tspolive oil
-
4links chicken-apple sausage cut into 1/2 inch pieces

3/4 cyellow onions
-
6 Tbspchopped green bell peppers
-
2 tspminced garlic
-
1 tspchopped fresh thyme
-
1/2 tspcreole seasoning
-
1/4 tspsalt
-
1/4 tsppepper
-
fried egg sunny side up
How To Make chicken and apple sausage hash with fried eggs

1In medium saucepan, place potatoes and enough salted water to cover by 1 inch

2Bring to a boil and cook until just tender (8 minutes)

3Drain well/set aside

4In a large skillet, heat the oil over medium-high heat

5Add the sausage3 and cook, stirring, until cooked through (5-6 minutes)

6Remove the sausage with slotted spoon and drain on paper towels
-
7To the fat pan, add onions and bell peppers and stir well
-
8Reduce heat and cook, stirring until soft (3 minutes)

9Add the garlic and cook, stirring for 30 seconds
-
10Add potatoes, thyme, cajun seasoning, salt and pepper

11Stir well

12Reduce heat and cook, stirring occasionally until potatoes turn golden brown (7-8 minutes)

13Return sausage to the pan, stir well and cook until heated through

14Top with a sunny side up egg
