Ingredients

  • 3 cups 1/2 inch diced potatoes
  • 2 teaspoons olive oil
  • 4 - links chicken-apple sausage cut into 1/2 inch pieces
  • 3/4 cup yellow onions
  • 6 tablespoons chopped green bell peppers
  • 2 teaspoons minced garlic
  • 1 teaspoon chopped fresh thyme
  • 1/2 teaspoon creole seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • fried egg sunny side up

How To Make chicken and apple sausage hash with fried eggs

  • Step 1
    In medium saucepan, place potatoes and enough salted water to cover by 1 inch
  • Step 2
    Bring to a boil and cook until just tender (8 minutes)
  • Step 3
    Drain well/set aside
  • Step 4
    In a large skillet, heat the oil over medium-high heat
  • Step 5
    Add the sausage3 and cook, stirring, until cooked through (5-6 minutes)
  • Step 6
    Remove the sausage with slotted spoon and drain on paper towels
  • Step 7
    To the fat pan, add onions and bell peppers and stir well
  • Step 8
    Reduce heat and cook, stirring until soft (3 minutes)
  • Step 9
    Add the garlic and cook, stirring for 30 seconds
  • Step 10
    Add potatoes, thyme, cajun seasoning, salt and pepper
  • Step 11
    Stir well
  • Step 12
    Reduce heat and cook, stirring occasionally until potatoes turn golden brown (7-8 minutes)
  • Step 13
    Return sausage to the pan, stir well and cook until heated through
  • Step 14
    Top with a sunny side up egg
