chicago-style deep-dish pizza
This is delicious pizza and my family loves it! I usually divide the dough in half to make two 12" crust pizzas. This recipe has been developed for a 14" round deep-dish pizza pan. The pizza could also be baked in a 13x9x2" cake pan. Roll the dough into a 15x11" rectangle. Baking time may be slightly less. I personally like to divide the dough in half, pat out 2 12" round pizzas, and add 1 or 2 other kinds of cheese. Experiment and have fun.

This Chicago-style deep-dish pizza has an easy homemade dough that lets you make pizza at home fairly quickly. Light and fluffy, the dough has a mild flavor. So, the sauce and toppings are the stars. It's a hearty slice topped with browned sausage, mushrooms, green peppers, onion, and lots of cheese. As it bakes, the crust gets very thick so don't be afraid to use all of the sauce.
Ingredients
- PIZZA SAUCE
- 1 can tomato sauce (8 oz.)
- 1 can tomato paste (6 oz.)
- 1 - 1 1/2 teaspoons dried oregano
- 1 teaspoon parsley flakes
- 1/2 - 3/4 teaspoons dried basil
- 1/2 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon crushed red pepper
- PIZZA CRUST
- 1 package quick-rise yeast
- 1/4 teaspoon sugar
- 1/2 cup warm water (110*-115* F)
- 3 1/2 cups all-purpose flour
- 1 1/2 teaspoons salt
- 3/4 cup water
- 3 tablespoons oil
- TOPPINGS:
- 1 pound pork sausage, lightly browned
- 1 cup sliced mushrooms
- 1/3 cup diced green peppers
- 1/4 cup chopped onion
- 1 package mozzarella cheese (8 oz.)
How To Make chicago-style deep-dish pizza

Step 1Combine tomato sauce and paste with seasonings; simmer 10 to 15 minutes. In a large skillet, lightly brown sausage; drain.

Step 2Prepare other ingredients and set aside.

Step 3Dissolve yeast and 1/4 teaspoon sugar in warm water. Set aside for 5 minutes.

Step 4In a food processor container with a dough blade add flour and salt.

Step 5Pour the yeast mixture into the flour mixture.

Step 6Heat water and oil to 110 -115 F. Pour it into the flour mixture.

Step 7Once a dough ball forms, process for 60 seconds until the dough cleans the sides of the container.

Step 8Place dough in an oiled bowl. Cover with plastic wrap and a towel. Let rest for 15 minutes. Preheat the oven to 425 degrees F.

Step 9On a lightly floured surface, roll the dough to a 16" circle or a 15x11" rectangle.

Step 10Place dough in a greased deep dish at least 2 inches deep.

Step 11Spread the sauce over the top of the dough. Then sprinkle the cooked pork over the sauce.

Step 12Arrange mushrooms, green pepper, and onion over the sausage.

Step 13Sprinkle cheese on top.

Step 14Bake at 425 degrees F for 20 - 25 minutes until the edges are crisp and golden brown and the cheese is melted.
