chicken broth
1/2 tsp
1 c
regular grits
1 c
shredded sharp cheddar cheese; divided
1 c
shredded monterey jack cheese with peppers
2 Tbsp
chopped green onions
1 clove
minced garlic
green pepper, diced
1 1/2 lb
small fresh shrimp, peeled and cooked
1 can(s)
10 ounce diced tomatoes with green chili's drained
salt and pepper

How to Make Cheesy Shrimp and grits


  • 1Bring 4 cups chicken broth and 1/2 teaspoon salt to a boil; stir in grits and cover; simmer for 20 minutes.
  • 2Stir together grits, 3/4 ci[ cheddar cheese and the Monterey Jack cheese.
  • 3Melt butter in large skillet over medium heat, add green onions, pepper, ang garlic and saute for 5 minutes or until tender.
  • 4Stir together green onion mixture, shrimp and next 3 ingredients. Pour into lightly greased 2 quart baking dish. Sprinkle top with remaining 1/4 cup cheddar cheese. Bake at 350 for 30 to 45 Minutes.
