Cheesy Shrimp and grits

1 cregular grits

1 cshredded sharp cheddar cheese; divided

1 cshredded monterey jack cheese with peppers

6chopped green onions

1 1/2 lbsmall fresh shrimp, peeled and cooked

1 can(s)10 ounce diced tomatoes with green chili's drained

How to Make Cheesy Shrimp and grits
- Bring 4 cups chicken broth and 1/2 teaspoon salt to a boil; stir in grits and cover; simmer for 20 minutes.
- Stir together grits, 3/4 ci[ cheddar cheese and the Monterey Jack cheese.
- Melt butter in large skillet over medium heat, add green onions, pepper, ang garlic and saute for 5 minutes or until tender.
- Stir together green onion mixture, shrimp and next 3 ingredients. Pour into lightly greased 2 quart baking dish. Sprinkle top with remaining 1/4 cup cheddar cheese. Bake at 350 for 30 to 45 Minutes.
