Ingredients
- 4 cups chicken broth
- 1/2 teaspoon salt
- 1 cup regular grits
- 1 cup shredded sharp cheddar cheese; divided
- 1 cup shredded monterey jack cheese with peppers
- 2 tablespoons butter
- 6 - chopped green onions
- 1 clove minced garlic
- 1 - green pepper, diced
- 1 1/2 pounds small fresh shrimp, peeled and cooked
- 1 can 10 ounce diced tomatoes with green chili's drained
- - salt and pepper
How To Make cheesy shrimp and grits

Step 1Bring 4 cups chicken broth and 1/2 teaspoon salt to a boil; stir in grits and cover; simmer for 20 minutes.

Step 2Stir together grits, 3/4 ci[ cheddar cheese and the Monterey Jack cheese.

Step 3Melt butter in large skillet over medium heat, add green onions, pepper, ang garlic and saute for 5 minutes or until tender.

Step 4Stir together green onion mixture, shrimp and next 3 ingredients. Pour into lightly greased 2 quart baking dish. Sprinkle top with remaining 1/4 cup cheddar cheese. Bake at 350 for 30 to 45 Minutes.
