Ingredients

  • 4 cups chicken broth
  • 1/2 teaspoon salt
  • 1 cup regular grits
  • 1 cup shredded sharp cheddar cheese; divided
  • 1 cup shredded monterey jack cheese with peppers
  • 2 tablespoons butter
  • 6 - chopped green onions
  • 1 clove minced garlic
  • 1 - green pepper, diced
  • 1 1/2 pounds small fresh shrimp, peeled and cooked
  • 1 can 10 ounce diced tomatoes with green chili's drained
  • - salt and pepper

How To Make cheesy shrimp and grits

  • Step 1
    Bring 4 cups chicken broth and 1/2 teaspoon salt to a boil; stir in grits and cover; simmer for 20 minutes.
  • Step 2
    Stir together grits, 3/4 ci[ cheddar cheese and the Monterey Jack cheese.
  • Step 3
    Melt butter in large skillet over medium heat, add green onions, pepper, ang garlic and saute for 5 minutes or until tender.
  • Step 4
    Stir together green onion mixture, shrimp and next 3 ingredients. Pour into lightly greased 2 quart baking dish. Sprinkle top with remaining 1/4 cup cheddar cheese. Bake at 350 for 30 to 45 Minutes.
