- 4 cups chicken stock
- 1 cup polenta
- 2 tablespoons butter
- 2 tablespoons mascarpone cheese
- 4 ounces fontina cheese grated
- 4 ounces romano cheese grated
- salt and pepper
- MUSHROOMS
- 4 tablespoons butter
- 2 tablespoons olive oil
- 1 pound cremini mushrooms sliced
- salt and pepper
- microgreens for garnish
How To Make cheesy polenta w garlic butter mushrooms

Step 1Bring the chicken stock to a boil. Stir in the polenta and whisk in the polenta and cook until thickened. Time depends if you have instant or not. Add the butter and cheeses and cook until cheese is melted. Season to tast with salt and Pepper

Step 2For the mushrooms, Add the butter and olive oil to a large skillet. Add the garlic and mushrooms and cook until the mushrooms are softened and juicy. Season with salt and pepper.

Step 3To plate place the polenta on a serving dish. Top with the mushrooms and add more Romano cheese. Top with microgreens.
