cheesy morel pie
In Northern Michigan, Morel Mushrooms are a big deal, they are by far the best mushroom I have ever tasted. But if you can't get morels then your favorite mushrooms will also work. This is a wonderfully tasty pie and will be a big hit whenever you make it.

Ingredients
- 1 pound morel mushrooms, rinsed and sliced
- 1 teaspoon mince garlic (sold in jars in dairy section)
- 5 slices bacon, uncooked
- 1 medium sweet onion, chopped
- 1 package cream cheese, room temperature
- 1 cup sharp shredded cheddar cheese
- 1/2 cup swiss cheese, shredded
- 3 tablespoons parmesan cheese
- 3 large eggs
- 3 sticks asparagus, fresh
- - salt and pepper, to taste
- 1/2 teaspoon paprika
- 1 small red pepper, diced
- 1 package refrigerated pie crust
How To Make cheesy morel pie

Step 1In a large skillet, fry bacon until done. drain on papertowel. when cool enough chop up in a food processor. set aside.

Step 2In the bacon drippings saute sliced morel mushrooms,onion,garlic,asparagus,and red pepper until veggies are tender.

Step 3In a large bowl beat eggs until foamy. Add cream cheese and beat until smooth. Mix in salt & pepper. Add veggie mixture and bacon pieces.

Step 4Unroll pastry in a 9" deep dish pie pan. Trim and flute edges. Fill bottom with cheddar cheese. Pour mixture in on top of cheese. Top with Swiss cheese, sprinkle parmesan and paprika on top.

Step 5Bake at 375^ for 30 min.
