Ingredients For cauliflower steaks with tomato basil vinaigrette

  • 1 lg
    head cauliflower
  • salt
  • 1 tsp
    lemon zest, grated
  • 2
    plum tomatoes
  • 1/4 c
    fresh basil, chopped
  • 2 Tbsp
    rice vinegar
  • 1 Tbsp
    olive oil
  • 2 Tbsp
    shredded Parmesan
  • salt and pepper

How To Make cauliflower steaks with tomato basil vinaigrette

    Trim the cauliflower of the green leaves and stem from the cauliflower, leaving the core.

    Place a large pot of water on the stove and add some salt. Once boiling, place the cauliflower upside down in the pot. Let boil 5 minutes.

    Preheat the oven to 375 degrees F. Line a baking sheet with foil or parchment paper.

    Drain the cauliflower and carefully cut it into 4 steaks.

    Place the steaks on the foil. Drizzle with olive oil. Add salt and lemon zest.

    Place in oven and roast for 20 minutes.

    Meanwhile, chop the tomatoes into small dice. Add the remaining ingredients.

    Serve over the roasted cauliflower steaks.
