Ingredients For cauliflower steaks with tomato basil vinaigrette

1 lghead cauliflower

salt

1 tsplemon zest, grated

2plum tomatoes

1/4 cfresh basil, chopped

2 Tbsprice vinegar

1 Tbspolive oil
-
2 Tbspshredded Parmesan

How To Make cauliflower steaks with tomato basil vinaigrette

1Trim the cauliflower of the green leaves and stem from the cauliflower, leaving the core.

2Place a large pot of water on the stove and add some salt. Once boiling, place the cauliflower upside down in the pot. Let boil 5 minutes.

3Preheat the oven to 375 degrees F. Line a baking sheet with foil or parchment paper.

4Drain the cauliflower and carefully cut it into 4 steaks.

5Place the steaks on the foil. Drizzle with olive oil. Add salt and lemon zest.

6Place in oven and roast for 20 minutes.

7Meanwhile, chop the tomatoes into small dice. Add the remaining ingredients.

8Serve over the roasted cauliflower steaks.
