This was my mother-in-laws recipe and we all loved the way she used the zucchini from the garden.

Ingredients

  • 1 medium
    zucchini (seeds removed)
  • 1 medium
    onion
  • 2 small
    green or red pepper
  • 3 medium
    potatoes
  • 2 medium
    2 medium tomatoes
  • 1 lb
    ground beef or poek
  • 1/4 c
    oil
  • 2 tsp
    sugar
  • 16 oz
    tomato sauce divided
  • 1/2 tsp
    oregano, dried
  • 2 tsp
    ramano cheese
  • 8 oz
    mozzarella cheese
  • ·
    s&p
  • 2 Tbsp
    italian parsley

How to Make Casserole Waltz

Step-by-Step

  1. chop veggies and saute in oil, add sugar, 8 oz tomato sauce, S&P and simmer for 10 minutes, add chopped parsley
  2. brown meat in another pan
  3. in casserole dish, layer 1/2 c. tomato sauce, 1/2 veggies, 1/2 meat, 1/2 mozzarella. Repeat
  4. Bake @ 375* for 45 minutes or till bubbly
