Ingredients

  • SHRIMP
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 4 cloves garlic, minced
  • CAROLINA BBQ SAUCE
  • 1/2 cup chicken stock
  • 1/2 cup ketchup
  • 1/4 cup yellow mustard
  • 1/4 cup apple cider vinegar
  • 2 tablespoons butter
  • CHEESY GRITS
  • 2 cups chicken or shrimp stock
  • 1 cup milk
  • 4 tablespoons butter
  • 3/4 cup quick cooking white grits
  • salt
  • pepper
  • 4 ounces whipped cream cheese
  • 1 cup sharp cheddar cheese
  • 4 scallions, chopped

How To Make carolina style bbq shrimp with cheesy grits

  • Step 1
    Place the shrimp in a large bowl or plastic bag. Add the olive oil, Cajun seasoning, and garlic, and let marinate for an hour.
  • Step 2
    Mix the ingredients for the BBQ sauce except butter together and set aside.
  • Step 3
    Add the chicken stock, milk, and butter to a pan. Bring to a boil. Whisk in the grits and keep whisking for about 5 minutes until thicken. Add the cream cheese and sharp cheddar cheese. Whisk until the cheese has melted. Season with salt and pepper. Move it aside and place a skillet on the stove. Add a little olive oil to the pan. Add the shrimp and marinade Cook until pink. Flip it over and cook until the other side is pink. Remove from pan and set aside. Add the sauce to the pan and whisk in the butter one at a time until the sauce is warmed and thickened.
  • Step 4
    Plate the grits in a bowl. Top with shrimp. Drizzle the BBQ sauce over top and sprinkle the scallions over top.
