breakfast taco bowl
I don't sleep much at night I do however think I don't think my mind ever stops maybe that's why I can't sleep but anyway this is what I dreamed up last night made it this morning for breakfast and it was great. Could be used for breakfast or dinner or even lunch.

Ingredients
- 3 small potatoes (diced)
- 1 large onion (diced)
- 1 cup tomatoes(whole)
- 1/2 cup black beans
- 1/2 cup cheese
- I cup i used leftovers taco meat (beef or chicken your favorite)
- Sour cream - for topping
- Taco sauce - topping
How To Make breakfast taco bowl

Step 1Put potatoes,onion,tomatoes,on baking sheet drizzle with olive oil. Sprinkle with Andy's taco seasoning. About 1 teaspoon.

Step 2Bake in 350 degree oven till fork tender. About 45 minutes.

Step 3Add black beans, left over taco meat about 15 minutes before putting bowl together.To warm thtough.

Step 4Putting bowl together Cover bottom of bowl with roasted veggies. Add cheese let melt add sour cream and taco sauce.
