I don't sleep much at night I do however think I don't think my mind ever stops maybe that's why I can't sleep but anyway this is what I dreamed up last night made it this morning for breakfast and it was great. Could be used for breakfast or dinner or even lunch.

Ingredients

  • 3 small potatoes (diced)
  • 1 large onion (diced)
  • 1 cup tomatoes(whole)
  • 1/2 cup black beans
  • 1/2 cup cheese
  • I cup i used leftovers taco meat (beef or chicken your favorite)
  • Sour cream - for topping
  • Taco sauce - topping

How To Make breakfast taco bowl

  • Step 1
    Put potatoes,onion,tomatoes,on baking sheet drizzle with olive oil. Sprinkle with Andy's taco seasoning. About 1 teaspoon.
  • Step 2
    Bake in 350 degree oven till fork tender. About 45 minutes.
  • Step 3
    Add black beans, left over taco meat about 15 minutes before putting bowl together.To warm thtough.
  • Step 4
    Putting bowl together Cover bottom of bowl with roasted veggies. Add cheese let melt add sour cream and taco sauce.
