Ingredients

  • 2 - pheasants, about 1 1/2 pounds each
  • - "just a pinch" of salt
  • - "just a pinch" of pepper
  • 1 - onion, sliced
  • 2 - carrots, pared and quartered
  • 2 slices bacon, lean smoked
  • 1/4 cup chicken broth
  • 1/4 cup sherry

How To Make braised pheasant (for crockpot)

  • Step 1
    Season cavity of each pheasant lightly with salt and pepper.
  • Step 2
    Arrange sliced vegetables in bottom of crockpot.
  • Step 3
    Place pheasant on top of vegetables.
  • Step 4
    Cut bacon slices in half and place over each breast; Add broth and sherry.
  • Step 5
    Cover and cook on low for 8 to 10 hours or on high for 3 to 4 hours.
