My husband and son LOVE this one! Don't let the large amount of garlic scare you. Once you've tried it, this dish will be a go to favorite. For a change, use rotisserie chicken instead of shrimp.

Ingredients

  • 9 cloves garlic, minced
  • 2 tablespoons fresh ginger
  • 1 bunch fresh cilantro, stemmed
  • 1/2 cup dry roasted peanuts
  • 1/2 teaspoon crushed red pepper
  • 1/2 cup olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon salt
  • 1 box bow tie pasta, cooked
  • 1 pound large shrimp, tails removed

How To Make bow thai shrimp

  • Step 1
    To prepare the sauce, place the garlic, ginger, cilantro, peanuts, crushed red pepper, oil, lime juice and salt in a blender or food processor bowl. Pulse until finely ground.
  • Step 2
    Cook and drain pasta. In medium saucepan, toss cooked pasta with pesto sauce and add shrimp. Heat over medium-low until just heated through, stirring frequently. Serve immediately.
