My husband and son LOVE this one! Don't let the large amount of garlic scare you. Once you've tried it, this dish will be a go to favorite. For a change, use rotisserie chicken instead of shrimp.

Ingredients

  • 9 clove
    garlic, minced
  • 2 Tbsp
    fresh ginger
  • 1 bunch
    fresh cilantro, stemmed
  • 1/2 c
    dry roasted peanuts
  • 1/2 tsp
    crushed red pepper
  • 1/2 c
    olive oil
  • 2 Tbsp
    fresh lime juice
  • 1 tsp
    salt
  • 1 box
    bow tie pasta, cooked
  • 1 lb
    large shrimp, tails removed

How to Make BOW THAI SHRIMP

Step-by-Step

  1. To prepare the sauce, place the garlic, ginger, cilantro, peanuts, crushed red pepper, oil, lime juice and salt in a blender or food processor bowl. Pulse until finely ground.
  2. Cook and drain pasta. In medium saucepan, toss cooked pasta with pesto sauce and add shrimp. Heat over medium-low until just heated through, stirring frequently. Serve immediately.
