Do you ever have unexpected company? This recipe will blow them away. Definitely company-worthy, with ingredients you probably have right in your pantry. It is bursting with lemon and Parmesan flavor and so easy to make. The organic Milton's crackers from Costco make a delicious salmon patty. Do try to pick them up. This is my humble recipe, please enjoy!

Ingredients

  • SALMON PATTIES
  • 1 can Wild Planet albacore tuna with the juice
  • 2 pepperoncini peppers, chopped fine, remove seeds
  • 1 1/2 teaspoons dill weed
  • 1 large egg
  • 2 tablespoons red onion chopped, fine
  • 6 Milton multi-grain organic crackers, coarse crushed
  • 2 tablespoons butter, for frying patties
  • LEMON EGG NOODLES
  • 3 cups cooked egg noodles
  • 1/4 cup chopped fresh Italian parsley
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons butter
  • 2 tablespoons fresh grated Parmesan cheese
  • salt and pepper, to taste

How To Make bonnie's tuna patties with lemon egg noodles

  • Lemon Egg Noodles
    Step 1
    I use my Fasta Pasta maker to cook the noodles. If you don't have one, just follow the cooking directions on the package.
  • Wild Planet Albacore Tuna
    Step 2
    I use Wild Planet Albacore Tuna. Don't drain it. Mix the juices in with the tuna as recommended by the manufacturer.
  • Milton's Multi-Grain Organic Crackers available at Costco and Amazon
    Step 3
    I use Milton's Multi-Grain Crackers. They are a delicious and healthy cracker and great in this recipe. You can get them at Costco or on Amazon.
  • Crushed crackers, Wild Planet Tuna, red onion, egg, and dill weed.

    MAKE THE PATTIES Combine all of the ingredients for tuna patties, except the butter, and mix gently.

    You can divide the mixture into 4 balls and make 4 medium-sized patties, or you can make 2 large patties. The recipe serving is two patties for each person. You can double the recipe to serve 4 people.

    COOK THE PATTIES Melt the butter in a nonstick skillet large enough for four tuna patties.
  • Golden Brown Tuna Patties

    Fry until golden brown on each side. Don't overcook. Remove to a platter and keep warm.
  • My Lemon Noodles

    MAKE THE LEMON EGG NOODLES While the patties are cooking, let's make the egg noodles. Drain the egg noodles and add butter to them while they are hot. Stir it in. Add the parsley, lemon juice, Parmesan cheese, salt, and pepper. Mix gently.
  • Tuna Pattie

    I like to serve the tuna patties with a wedge of lemon, resting over a bed of these delicious lemon egg noodles. Enjoy!

    Note: You may also use canned or cooked salmon, or cooked deli chicken as a substitution in this recipe.
