bonnie's beef sausage with asparagus and potatoes

This recipe came from a member of my husband's family. I have made a few changes to suit our tastes, and to make it a little more "heart-friendly". It is a great recipe to have on hand when you are short on time, and it is also good when you have unexpected company for dinner. I hope you enjoy this humble recipe.

Ingredients

  • 1 Johnson's beef sausage ring, cut on diagonal, 1/2 inch slices
  • extra virgin olive oil, for frying and drizzling
  • 2 tablespoons butter
  • 1/2 large onion, chopped
  • 4 red potatoes, medium-large
  • salt and pepper, to taste
  • 1 bunch asparagus, trimmed
  • Kosher salt

How To Make bonnie's beef sausage with asparagus and potatoes

  • Step 1
    Slice the Johnson's beef ring diagonally. Brown sausage in a little oil or butter. Set aside.
  • Step 2
    Rinse the red potatoes under running water, shaking off the excess, and place the potatoes in the microwave. Time to cook the potatoes until tender. About 15 minutes. Remove to a cutting board and slice into one-inch thick slices. Spread the slices in one layer to cool off. Once they are cool enough to handle, you can easily remove the peelings with your fingers or a fork. Discard peelings. Cut potatoes into large chunks.
  • Step 3
    Prepare asparagus, trim and rinse, and pat dry with paper towels. Place asparagus in a shallow pan in one layer. Drizzle with olive oil and Kosher salt and set aside. Preheat the oven to 425 degrees, and roast asparagus for 15 minutes.
  • Step 4
    Put oil and butter in a large skillet to melt over medium heat. Chop the onion, and two minutes later, add the garlic to the hot pan. Cook and stir until tender. Remove and set aside on a platter. Add potatoes to the pan and brown on both sides, and remove to the platter. Add Johnson's sausage brown on both sides. At this point, I wipe out my skillet with a paper towel to remove excess oil. Return the potatoes and onions, and garlic to the hot skillet and gently combine with the cooked sausage. Cover and keep warm.
  • Step 5
    Serve the asparagus on the side with the sausage and potatoes. Enjoy!
