Ingredients

  • 3 slice
    bacon
  • 1
    16-oz. can black-eyed peas, drained
  • 1
    14 1/2-oz. can diced tomatoes, undrained
  • 1/4 tsp
    tabasco sauce
  • 1 1/2 c
    cooked rice
  • 1/8 tsp
    garlic powder
  • 1/8 tsp
    pepper

How to Make Black-eyed Peas and Rice

Step-by-Step

  1. Cook bacon in a large skillet until crisp. Remove bacon, reserving drippings in skillet.
  2. Crumble bacon and set aside.
  3. Sauté onion in drippings until tender.
  4. Drain onion and discard drippings; return onion to skillet.
  5. Add black-eyed peas and remaining ingredients; cover and cook over low heat 8 to 10 minutes.
  6. Spoon into a serving dish; sprinkle crumbled bacon over top.
