I came up with this recipe several years ago. Just played around with different items. We Love black beans for extra fiber and nutrition.

MIX THE FOLLOWING TOGETHER AND HEAT IN MICROWAVE
black beans (rinsed)
taco seasoning mix
SLICE GREEN ONIONS, BLACK OLIVES AND ROMA TOMATO
green onions (sliced)
roma tomato (cut in pieces)
tex mex cheese (shredded)
tostitos (round shaped ones)
How To Make
Mix Black beans, cooked hamburger and taco seasoning in microwave proof bowl and heat for a minute or two.
Sprinkle Tostitos on plate. Spoon on Black bean mixture.
Place black olives, green onions and tomato on top of the mixture on plate.
Sprinkle the desired cheese on top and microwave until the cheese is completely melted.
We also sprinkle a little Mexican seasoning on before eating. Also use jarred jalapeño peppers for added flavor. Also spoon some chunky salsa on for added flavor.
