black bean nachos

I came up with this recipe several years ago. Just played around with different items. We Love black beans for extra fiber and nutrition.

Ingredients

  • MIX THE FOLLOWING TOGETHER AND HEAT IN MICROWAVE
  • 1/2 cup black beans (rinsed)
  • 1 cup cooked hamburger
  • 1 tablespoon taco seasoning mix
  • SLICE GREEN ONIONS, BLACK OLIVES AND ROMA TOMATO
  • slice black olives
  • 2 medium green onions (sliced)
  • 1 medium roma tomato (cut in pieces)
  • 1/2 cup tex mex cheese (shredded)
  • - tostitos (round shaped ones)

How To Make black bean nachos

  • Step 1
    Mix Black beans, cooked hamburger and taco seasoning in microwave proof bowl and heat for a minute or two.
  • Step 2
    Sprinkle Tostitos on plate. Spoon on Black bean mixture.
  • Step 3
    Place black olives, green onions and tomato on top of the mixture on plate.
  • Step 4
    Sprinkle the desired cheese on top and microwave until the cheese is completely melted.
  • Step 5
    We also sprinkle a little Mexican seasoning on before eating. Also use jarred jalapeño peppers for added flavor. Also spoon some chunky salsa on for added flavor.
