1Heat approx. 1 Tablespoon of oil in a large non-stick pan over medium heat. Add diced onion and sauté approx. 1 minute. Add garlic and sauté. Be careful not to let garlic burn!
2Add black beans and stir to combine with the onion and garlic. Add chipotle pepper, adobo sauce and Old Bay seasoning. Stir to combine. Let cook another minute or so, then add shrimp. Cook until heated through, stirring occasionally.
