Flavourful ground beef (mince) with onions and French onion soup mix rolled within savoury scone dough, topped with a tomato "gravy" and slow cooked for 4 hours in your Crock Pot (slow cooker). Perfect for a cooler night or when you don't want to turn on the oven. Best eaten just after cooking, unsuitable for freezing. You will need a large 6-7 litre (1 1/2 gallon or 12 - 14 pint) Crock Pot for this recipe to be successful.

Ingredients

  • oil spray
  • 2 pounds lean ground beef (beef mince)
  • 1 onion, chopped as fine as you can
  • 1 sachet of French onion soup moix
  • 1 teaspoon mixed dried herbs
  • SAVOURY SCONE DOUGH
  • 2 cups self-rising flour
  • 2 tablespoons cold butter, chopped small or grated
  • 1/2 cup cold milk
  • 1/2 cup water
  • 1/2 teaspoon mixed dried herbs
  • 1 teaspoon onion powder
  • TOMATO GRAVY - TO GO ON TOP
  • 2 cans condensened tomato soup (not creamy)
  • 1 cup water

How To Make betty's beef wagon wheels

  • Step 1
    To make the dough - add the flour and herbs into a large bowl. Add the butter and "rub in" with your fingertips. The flour will resemble fine breadcrumbs. Add in the milk and water, and use your hands to gently knead. Roll the dough on a floured surface to make a rough rectangle 16 x 8 inches (40 x 20 cm).
  • Step 2
    In the same bowl that you made the dough in, add the beef, onions, herbs, and French onion soup mix. Use your hands to blend well.
  • Step 3
    Pat the meat mix onto the dough evenly. Leave the edge farthest away from you 1/3 empty (otherwise the meat will squeeze out when you roll it).
  • Step 4
    Carefully roll the dough with the mince into a tight "sushi roll" and place the seam at the bottom. Using a serrated-edged knife, cut into 1-inch slices. You have now made raw "wagon wheels."
  • Step 5
    Use the oil spray on the base and sides of your Crock Pot. Place the wagon wheels in the bottom of the Crock Pot and lay them on the CUT side down. Some will be on the bottom of the Crock Pot while others will sit on top of the ones on the base.
  • Step 6
    In the same bowl again, blend the soup and water. Pour over the wagon wheels as evenly as you can and cover. Cook on high for 3 to 3.5 hours.
  • Step 7
    Serve with a light salad in summer or veggies and crusty bread in winter. These a winner in our home. Remove carefully with a spatula, or just go for it and break into them and serve in pieces/broken.
