Ingredients

  • 2 cups cooked pinto beans, or canned including liquid
  • 1 small green bell pepper, diced
  • 1 small yellow onion, diced
  • 2 tablespoons fresh cilantro, chopped
  • 4 tablespoons butter
  • 15 ounces coconut milk
  • 2 cups long grain white rice, rinsed
  • - salt and pepper, to taste
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon celery seed
  • 1/8 teaspoon ground coriander
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon paprika
  • 1/8 teaspoon garlic powder

How To Make belizean beans and rice

  • Step 1
    Combine all ingredients in a large saucepan and bring to a boil over a medium flame.
  • Step 2
    Cover, reduce heat to the lowest setting and simmer 30 minutes. Fluff rice with a fork just before serving.
