Ingredients For belizean beans and rice

  • 2 c
    cooked pinto beans, or canned including liquid
  • 1 sm
    green bell pepper, diced
  • 1 sm
    yellow onion, diced
  • 2 Tbsp
    fresh cilantro, chopped
  • 4 Tbsp
    butter
  • 15 oz
    coconut milk
  • 2 c
    long grain white rice, rinsed
  • salt and pepper, to taste
  • 1/8 tsp
    chili powder
  • 1/8 tsp
    celery seed
  • 1/8 tsp
    ground coriander
  • 1/8 tsp
    nutmeg
  • 1/8 tsp
    onion powder
  • 1/8 tsp
    paprika
  • 1/8 tsp
    garlic powder

How To Make belizean beans and rice

    Combine all ingredients in a large saucepan and bring to a boil over a medium flame.

    Cover, reduce heat to the lowest setting and simmer 30 minutes. Fluff rice with a fork just before serving.
