beans and veggies on the spicy side

I started with a recipe in an older cookbook. I have tweaked it and made it more to my taste. Great way to eat beans and this dish only takes about 30 minutes. Yummy

Ingredients

  • 1 large red onion-chopped
  • 1/2 - green bell pepper-chopped
  • 1/2 - red bell pepper-chopped
  • 2 - ribs celery-chopped
  • 3 cloves garlic-minced
  • 15 ounces canned red kidney beans-drained
  • 15 ounces canned garbanzo beans-drained
  • 14 ounces canned diced tomatoes with italian seasonings
  • 1/2 cup water
  • 1 tablespoon chili powder
  • 1 tablespoon dried oregano
  • 2 teaspoons hot pepper sauce

How To Make beans and veggies on the spicy side

  • Step 1
    Coat large skillet with cooking spray--add onion and cook until crisp/tender. Add peppers, celery, and garlic. Cover and cook about 5 minutes over med heat. Stirring from time to time.
  • Step 2
    Add tomatoes, both beans, water, chili powder, and oregano;mix together. Bring to boil and the simmer on low heat about 20-30 minutes. Turn off heat and stir in hot pepper sauce; serve.
