I had a short amount of time and made this tasty meal with what I had on hand. Many things could be adjusted to what you have on hand, too - color of peppers or onions, type of sausage, kind of rice. Obviously more time will be needed if not using instant rice. As written it looks very festive with all the red foods!

  • 1 Tbsp
    oil (or spray )
  • 1/2 c
    red onion, chopped
  • 1 c
    red pepper, chopped (1 pepper or 1/2 and 1/2 green and red)
  • 1 clove
    garlic, minced
  • 1/2 lb
    knackwurst or favorite sausage, sliced
  • 1 c
    instant brown ride
  • 15 oz
    pinto beans (1 can)
  • 1/2 tsp
    dried oregano, crumbled
  • 15 oz
    fire roasted tomatoes
  • 1/2 tsp
    salt, or to taste
  • 1/4 tsp
    pepper, or to taste
  • ·
    siracha or other hot sauce, optional

How to Make Beans and Sausage with Rice


  1. Heat pan and either spray or add oil. Sauce onions and peppers for a few minutes until starting to soften, add garlic. Saute another minute, add sliced sausage. How long you saute the sausage depends what kind is used. Sausage with a coarser grind (i.e. chorizo) would need to cook longer that the knackwurst I used.
  2. Add can of fire-roasted tomatoes, drained pinto beans. Add rice and water, stir to mix.
  3. Bring to boil, cover and simmer until rice is done and moisture is absorbed. (Check package for time) Add seasonings, adjust to taste.
    Serve with optional siracha or hot sauce.
