beans and sausage with rice

I had a short amount of time and made this tasty meal with what I had on hand. Many things could be adjusted to what you have on hand, too - color of peppers or onions, type of sausage, kind of rice. Obviously more time will be needed if not using instant rice. As written it looks very festive with all the red foods!

Ingredients
- 1 tablespoon oil (or spray )
- 1/2 cup red onion, chopped
- 1 cup red pepper, chopped (1 pepper or 1/2 and 1/2 green and red)
- 1 clove garlic, minced
- 1/2 pound knackwurst or favorite sausage, sliced
- 1 cup instant brown ride
- 15 ounces pinto beans (1 can)
- 1/2 teaspoon dried oregano, crumbled
- 15 ounces fire roasted tomatoes
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon pepper, or to taste
- - siracha or other hot sauce, optional
How To Make beans and sausage with rice

Step 1Heat pan and either spray or add oil. Sauce onions and peppers for a few minutes until starting to soften, add garlic. Saute another minute, add sliced sausage. How long you saute the sausage depends what kind is used. Sausage with a coarser grind (i.e. chorizo) would need to cook longer that the knackwurst I used.

Step 2Add can of fire-roasted tomatoes, drained pinto beans. Add rice and water, stir to mix.

Step 3Bring to boil, cover and simmer until rice is done and moisture is absorbed. (Check package for time) Add seasonings, adjust to taste. Serve with optional siracha or hot sauce.
