barb's crustless quiche recipe

This recipe was handed down to me by my very best friend, Barb M. She and I have been friends for some 25 yrs. Sadly she has MS and doesn't do as much cooking as she once had. When I make this dish, I'm reminded of our 'tried and true' friendship, which is much like her recipe...tried and true!

Ingredients

  • 1 cup cauliflower, small florets
  • 1 cup carrots, chopped
  • 1 cup broccoli florets
  • 2 cups mushrooms, fresh slices
  • 1/2 cup onions chopped small
  • 1 cup celery ribs chopped small
  • 1 can shrimp (small)
  • 4 slices smoked bacon (chopped)
  • 2 cups grated premium swiss cheese
  • 2 tablespoons parmigiano-reggiano, grated

How To Make barb's crustless quiche recipe

  • Step 1
    Preheat oven to 375 degrees. Sauté bacon first, remove to small bowl. Reserving some fat for other veggies.Then add chopped celery, onion, broccoli, cauliflower, and mushrooms. Do not over cook! Sprinkle with salt and pepper (to taste)
  • Step 2
    In a separate bowl, beat 5 large eggs with 2 cups of whole milk. Grate 2 cups of premium swiss cheese.
  • Step 3
    Pour a little better than half of the liquid into a deep dish pie plate. Add sautéed ingredients. Cover with grated swiss cheese, then the balance of liquid. Sprinkle the top of quiche with 2 tbs. of Parmesan cheese.
  • Step 4
    Bake in preheated over for 35 - 40 minutes. Or until a knife inserted halfway through pie, comes out clean. Please note: you can use ham, chicken, or almost anything you'd like to add...it'll turn out great!
