- SALSA
- 2 cups diced pineapple
- 1/4 cup chopped red onion
- 3 tablespoons chopped fresh mint
- TACOS
- 12 - 8" flour tortillas
- 3 tablespoons butter
- 1 pound shelled, deveined uncooked medium shrimp
- 2 tablespoons packed brown sugar
- 1-2 - chipotle chiles in adobo sauce, chopped
- 1 tablespoon adobo sauce
- 2 cups shredded romaine lettuce
How To Make baja shrimp tacos w pineapple-mint salsa

Step 1Heat oven to 350. In a medium bowl, stir together all salsa ingredients. Wrap tortillas in foil; heat in oven 10 min.

Step 2Meanwhile, melt butter in heavy large skillet over med-high heat. Add shrimp, brown sugar, chiles and 1 Tbsp. adobo sauce. Cook, stirring constantly, 1-3 minutes or until shrimp turn pink.

Step 3To serve, place shrimp on serving platter, surround with lettuce. Pass salsa and tortillas
