awesome red beans and rice
These red beans and rice really give you a taste of Nawlins cooking. Serve along with some jalapeno cornbread or french bread baguettes.

Ingredients
- 1 pound dried light red kidney beans
- 2 quarts water
- 2 medium yellow onions, chopped
- 2 ribs celery with leaves, chopped
- 1/2 green bell pepper
- 2 1/2 teaspoons kosher salt
- 1 1/2 teaspoons each - rounded tsp. ground thyme and oregano
- 1 1/4 teaspoons rounded tsp. garlic powder
- 3/4 teaspoon cayenne pepper
- 2 bay leaves
- 1 pound smoked sausage, cut into 1/2 inch pieces
- hot cooked rice
- green onions, chopped for garnish
How To Make awesome red beans and rice

Step 1Wash beans and dry well. In a stockpot, combine water and beans and soak overnight.

Step 2When ready to cook, add onion, celery, bell pepper to the beans/water and bring to a boil. Reduce heat, cover, and simmer approximately 1 1/2 hours or until the beans are soft and thickened. Do not stir unless necessary. Add in salt, thyme, oregano, garlic powder, cayenne, bay leaves and sausage. Stir and continue simmering for an additional 30 minutes or until beans are tender.

Step 3Serve beans over hot rice and garnish with chopped green onions.
