I love asparagus, and this is one great way to use it. It combined with the ham, and the accent of the mustard in the recipe made it a hit with my family.

Ingredients

  • 1 pound asparagus, cut in one inch pieces
  • 6 large eggs
  • 3/4 cup milk
  • 2 tablespoons prepared mustard
  • 1 teaspoon dry mustard
  • 1/4 cup chopped onion
  • 2 cups diced cooked ham
  • 2 cups grated swiss cheese

How To Make asparagus-ham custard

  • Step 1
    Preheat oven to 400 degrees Steam asparagus pieces until just tender crisp. Drain and set aside. (Drained canned asparagus can be substituted for fresh)
  • Step 2
    Beat eggs until light in color. Add milk. Blend in mustards, mixing well
  • Step 3
    Stir in onion, ham and cheese until well combined. Gently fold in asparagus
  • Step 4
    Pour mixture into a greased 8 inch square baking dish. Garnish with 5 asparagus tips and sprinkling of ham in the center
  • Step 5
    Bake for 30-35 mins or until knife inserted in center comes clean
