I obtained this recipe a number of years ago from the Hadassah Magazine. It is a fun variation on the traditional Chanukah latkes and a hit with the family. Very easy to make and sure to become a family favorite.

Ingredients

  • 2 large eggs, well beaten
  • 1 1/2 cups orange juice or plain yogurt or milk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 dash salt
  • 1/4 to 1/2 cup sugar (to taste preference)
  • 3 medium tart apples, peeled and coarsely grated
  • 1 vegetable oil for frying
  • 1 confectioners' sugar
  • 1 cinnamon powder

How To Make ada shoshan's apple latkes

  • Step 1
    Mix eggs in a bowl with EITHER orange juice, yogurt, or milk.
  • Step 2
    In a separate bowl, combine flour, baking powder, salt, and sugar.
  • Step 3
    Stir dry ingredients into egg mixture, then add apples.
  • Step 4
    Heat a thin layer of oil in skillet. Allow 2 tbsp. of batter per latke and drop mixture into frying pan.
  • Step 5
    Fry for about 2 min per side on med heat or until golden brown. Drain oil on paper towels. Sprinkle with confectioner's sugar and cinnamon. Serve immediately.
