ada shoshan's apple latkes
I obtained this recipe a number of years ago from the Hadassah Magazine. It is a fun variation on the traditional Chanukah latkes and a hit with the family. Very easy to make and sure to become a family favorite.

Ingredients
- 2 large eggs, well beaten
- 1 1/2 cups orange juice or plain yogurt or milk
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 dash salt
- 1/4 to 1/2 cup sugar (to taste preference)
- 3 medium tart apples, peeled and coarsely grated
- 1 vegetable oil for frying
- 1 confectioners' sugar
- 1 cinnamon powder
How To Make ada shoshan's apple latkes

Step 1Mix eggs in a bowl with EITHER orange juice, yogurt, or milk.

Step 2In a separate bowl, combine flour, baking powder, salt, and sugar.

Step 3Stir dry ingredients into egg mixture, then add apples.

Step 4Heat a thin layer of oil in skillet. Allow 2 tbsp. of batter per latke and drop mixture into frying pan.

Step 5Fry for about 2 min per side on med heat or until golden brown. Drain oil on paper towels. Sprinkle with confectioner's sugar and cinnamon. Serve immediately.
