white bean & chicken soup

I haven't come-up with a name for this but we love it. I took it to a church potluck & everyone there like it, also. Maybe someone here can come up with a name for it. What started it was leftover white beans great northern or navy I'm not sure which one either one works well.

Ingredients

  • 2 cans white beans or 3 to 4 cups leftover ones
  • 1 can chicken breast or leftover chicken or fresh cooked chicken breast
  • 1 can whole kernel corn
  • 1 can diced tomatoes & green chilies (ro-tel)
  • 1 can green chiles
  • - grated cheese (mexican four cheese)
  • - sour cream
  • - fresh avocado or guacamole optional

How To Make white bean & chicken soup

  • Step 1
    Drain the chicken & the corn add them & the other ingredients to a large pot. If you are using chicken you cooked you'll want to shred it. Heat until all is bubbly.
  • Step 2
    Serve with grated cheese of your chose I use the Mexican four cheese & sour cream a must. We eat it with tostitos scoops. No silverware required.
  • Step 3
    We enjoy this year round & it's super quick to make when you need something in a hurry. ENJOY!!
