This recipe is so tasty you won't miss the meat.you can use any combination of vegetables but these are my personal favorites.

Ingredients

  • - cooking oil
  • - carrots,chopped small
  • - onions,chopped small
  • - chayote,chopped small
  • - zucchini,chopped small
  • - whole kernel corn,fresh or can
  • - garlic,minced
  • - mushrooms,chopped
  • - jack cheese,shredded
  • - corn tortillas
  • - green enchilada sauce
  • - chunkly salsa,homemade or rom a jar
  • - cilantro,chopped

How To Make vegetable enchiladas

  • Step 1
    Heat oil in a large skillet.Add onions,carrots and chayote,saute until slightly soft.Add remaining vegetables and cook until all vegetables are tender.Set aside.
  • Step 2
    Heat addtional oil in skillet until hot, add tortillas one at a time,cook a few seconds just to soften
  • Step 3
    Dip a tortilla in enchilada sauce on both sides,add 2 tablespoons vegetable filling,a teaspoon cheese,roll up place seam side down in a oven proof dish.Spoon salsa over enchiladas.Pour additional enchilada sauce over salsa.Bake 10-15 mins until sauce is bubbly.Cover with cheese and bake just till cheese melts.Remove from oven.sprinkle with cilantro.
