Ingredients
- - cooking oil
- - carrots,chopped small
- - onions,chopped small
- - chayote,chopped small
- - zucchini,chopped small
- - whole kernel corn,fresh or can
- - garlic,minced
- - mushrooms,chopped
- - jack cheese,shredded
- - corn tortillas
- - green enchilada sauce
- - chunkly salsa,homemade or rom a jar
- - cilantro,chopped
How To Make vegetable enchiladas

Step 1Heat oil in a large skillet.Add onions,carrots and chayote,saute until slightly soft.Add remaining vegetables and cook until all vegetables are tender.Set aside.

Step 2Heat addtional oil in skillet until hot, add tortillas one at a time,cook a few seconds just to soften

Step 3Dip a tortilla in enchilada sauce on both sides,add 2 tablespoons vegetable filling,a teaspoon cheese,roll up place seam side down in a oven proof dish.Spoon salsa over enchiladas.Pour additional enchilada sauce over salsa.Bake 10-15 mins until sauce is bubbly.Cover with cheese and bake just till cheese melts.Remove from oven.sprinkle with cilantro.
