A different take on quesadillas, using tuna. The crunch of the sunflower seeds added to this recipe makes for an interesting touch. I got it from a little Mexican takeout place in San Diego many years ago, with a little spin of my own. Don't let the sound of this throw you off. It really is a quick, easy, and tasty treat!

Ingredients

  • 1 can tuna, packed in water (drained)
  • - corn tortillas
  • - shredded cheese (i use medium cheddar)
  • - roasted sunflower seeds
  • - taco or hot sauce
  • - tomato, diced (optional)
  • - lettuce, shredded (optional)

How To Make tuna-dillas

  • Step 1
    Sprinkle cheese on a corn tortilla like you would for a quesadilla. Top with tuna. I add a little mayo to the tuna to act as a binder, but you don't have to. Sprinkle with roasted sunflower seeds. Add taco or hot sauce to your taste.
  • Step 2
    Microwave for about 25 seconds until cheese is melted and tortilla is soft.
  • Step 3
    Add lettuce and tomatoes if desired and roll up.
