A different take on quesadillas, using tuna. The crunch of the sunflower seeds added to this recipe makes for an interesting touch. I got it from a little Mexican takeout place in San Diego many years ago, with a little spin of my own. Don't let the sound of this throw you off. It really is a quick, easy, and tasty treat!

    tuna, packed in water (drained)
  • ·
    corn tortillas
  • ·
    shredded cheese (i use medium cheddar)
  • ·
    roasted sunflower seeds
  • ·
    taco or hot sauce
  • ·
    tomato, diced (optional)
  • ·
    lettuce, shredded (optional)

How to Make Tuna-dillas


  1. Sprinkle cheese on a corn tortilla like you would for a quesadilla.
    Top with tuna. I add a little mayo to the tuna to act as a binder, but you don't have to.
    Sprinkle with roasted sunflower seeds.
    Add taco or hot sauce to your taste.
  2. Microwave for about 25 seconds until cheese is melted and tortilla is soft.
  3. Add lettuce and tomatoes if desired and roll up.
