tortilla soup - family favorite

This soup began from a WW recipe and has morphed into what you see today. My family loves this soup and it's even better the next day. I hope you enjoy it as much as we do.

Ingredients

  • 1 - chicken breasts, roasted and shredded
  • 3 boxes organic chicken broth, (32 oz boxes)
  • 4 - 5 small zucchini, bite size pieces
  • 1 bunch green onions, chopped
  • clove garlic, minced (we use a lot of garlic, use whatever your family prefers)
  • 2 cans rotel tomatoes
  • 2 cans corn
  • 1 dash chipotle chili powder
  • 1 tablespoon canola oil
  • 1 bunch cilantro, fresh
  • - avocado
  • - pepper jack cheese, shredded
  • - tortilla chips

How To Make tortilla soup - family favorite

  • Step 1
    Lightly sauté the zucchini, green onions and garlic
  • Step 2
    Add the corn and tomatoes, do not drain
  • Step 3
    Add the chili powder
  • Step 4
    Add the broth, chicken
  • Step 5
    Stir and let simmer for about 30 minutes
  • Step 6
    Chop and add cilantro to soup and turn off the heat
  • Step 7
    Add sliced avocado, pepper jack cheese, and tortilla chips to your bowl. Whatever amount suits your fancy.
  • Step 8
    Add the soup to the bowl (I always add just a pinch of cheese on top as well)
  • Step 9
    Enjoy!
