Ingredients
- 1 1/2 cups monterey jack cheese, shredded
- 1 1/2 cups cheddar cheese, shredded
- 3 ounces cream cheese softened
- 1 - bell pepper, chopped
- 1/2 cup green onions, chopped
- 1 teaspoon cumin
- 8 - flour tortillas
- 1 can enchilada sauce
- - lettuce, chopped
- - tomato, chopped
How To Make three cheese enchiladas

Step 1Combine 1 cup monterey jack cheese, 1 cup cheddar cheese, cream cheese, 1/4 c. enchilada sauce, green pepper, onions and cumin. Mix well.

Step 2Spoon 1/4 cup of the cheese mixture down the center of each tortilla. Roll and place seam side down in a 9 x 13" baking dish.

Step 3Spoon 3/4 cup of the enchilada sauce even over the enchiladas. Cover enchiladas with the remaining cheese. Bake at 350º for about 20 minutes or until hot. Top with lettuce and chopped tomatoes.
