Ingredients
- - 1 tbsps. vegetable oil
- - 1 tbsp. flour
- - 2 tsp. chili powder
- - 1/4 tsp. ground cumin
- - 1/2 tsp. salt
- - 1 pinch garlic powder
- - 2/3 cup cold water
- - 1/3 cup canned tomato sauce
- - 10 el monterey taquitos (costco)
- - 4 oz. shredded cheddar or monterey jack cheese
How To Make taquito enchiladas

Step 1Heat oil in small pan over medium heat. Add flour and chili powder and cook, stirring with a whisk, for 1 minute. Dissolve cumin, salt and garlic powder in water. Add to pan along with tomato sauce. Bring to a boil, then lower heat and simmer for 2 minutes, stirring frequently. Remove from heat and let cool for 10 minutes. Preheat oven to 400. Put taquitos in a deep baking dish. Cover with sauce, spreading with a spoon to coat evenly. Sprinkle with shredded cheese. Bake, uncovered for 30 minutes or until heated through. Let cool for 10 minutes before serving. Makes 5 servings. To make in the microwave, cook on high for 12 to 14 minutes. To save time, substitute 1 cup prepared enchilada sauce for the sauce.
