Taco Stuffed Peppers

Healthy, Easy, Fast and Delicious...Who can ask for anything More! (You can even eliminate the peppers and use the taco mixture for a healthy taco salad)
Ingredients

1 1/2 lblean ground beef or turkey

1 mediumchopped onion

1 can(s)tomatoe sauce
-
2 tspchilli powder
-
1 tspcumin powder
-
1 tspred pepper flakes
-
1 tspgarlic powder
-
4 mediumgreen bell peppers with caps sliced off
-
1 can(s)red kidney beans
-
1 pkglow fat cheddar cheese
-
2 mediumtomatoes cut up in small pieces
-
1 smallcontainer of fat free sour cream
How to Make Taco Stuffed Peppers
- Cook ground Meat and Onion in a skillet sprayed with Olive oil cooking spray
- Add Tomatoe sauce, and herbs and kidney beans, cook thoroughly
- Meanwhile steam the peepers (or you can eliminate this step and just bake, I like to pre -cook the peppers for a head start)
- Stuff Each pepper with meat mixture
- Place into a pan lightly sprayed with olive oil spray and bake at 350 degrees for approx. 20 minutes
- Serve with toppings and Enjoy a very healthy meal..Salad on the side goes nicely.
