Ingredients

  • 1 1/2 pounds lean ground beef or turkey
  • 1 medium chopped onion
  • 1 can tomatoe sauce
  • 2 teaspoons chilli powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 4 medium green bell peppers with caps sliced off
  • 1 can red kidney beans
  • 1 package low fat cheddar cheese
  • 2 medium tomatoes cut up in small pieces
  • 1 small container of fat free sour cream

How To Make taco stuffed peppers

  • Step 1
    Cook ground Meat and Onion in a skillet sprayed with Olive oil cooking spray
  • Step 2
    Add Tomatoe sauce, and herbs and kidney beans, cook thoroughly
  • Step 3
    Meanwhile steam the peepers (or you can eliminate this step and just bake, I like to pre -cook the peppers for a head start)
  • Step 4
    Stuff Each pepper with meat mixture
  • Step 5
    Place into a pan lightly sprayed with olive oil spray and bake at 350 degrees for approx. 20 minutes
  • Step 6
    Serve with toppings and Enjoy a very healthy meal..Salad on the side goes nicely.
