  • 1 1/2 lb
    lean ground beef or turkey
  • 1 medium
    chopped onion
  • 1 can(s)
    tomatoe sauce
  • 2 tsp
    chilli powder
  • 1 tsp
    cumin powder
  • 1 tsp
    red pepper flakes
  • 1 tsp
    garlic powder
  • 4 medium
    green bell peppers with caps sliced off
  • 1 can(s)
    red kidney beans
  • 1 pkg
    low fat cheddar cheese
  • 2 medium
    tomatoes cut up in small pieces
  • 1 small
    container of fat free sour cream

How to Make Taco Stuffed Peppers


  1. Cook ground Meat and Onion in a skillet sprayed with Olive oil cooking spray
  2. Add Tomatoe sauce, and herbs and kidney beans, cook thoroughly
  3. Meanwhile steam the peepers (or you can eliminate this step and just bake, I like to pre -cook the peppers for a head start)
  4. Stuff Each pepper with meat mixture
  5. Place into a pan lightly sprayed with olive oil spray and bake at 350 degrees for approx. 20 minutes
  6. Serve with toppings and Enjoy a very healthy meal..Salad on the side goes nicely.
