We made this for our church's Senior Lunch and they LOVED it.

Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 package (1.25 ounce) taco seasoning mix
  • 2 cups water
  • 1 can (15 ounce) mild chili beans
  • 1 can (15.25 ounce) whole kernel corn, drained
  • 1 can (15 ounce) kidney beans, rinsed and drained
  • 1 can (14.5 ounce) crushed tomatoes
  • 1 can (10 ounce) diced tomatoes with green chile peppers
  • 1 can (4 ounce) chopped green chilies
  • 1 package (1 ounce) ranch salad dressing mix
  • 1/4 cup grated cheddar cheese for garnish
  • - a few corn chips for garnish

How To Make taco soup- good and easy!

  • Step 1
    1.In a Dutch oven or large kettle, cook beef over medium heat until no longer pink; drain. Add taco seasoning and mix well. Stir in remaining ingredients, except shredded cheese and corn chips.
  • Step 2
    Simmer, uncovered, for 15 minutes or until heated through, stirring occasionally. Add more water or add beef broth to acheive the soup consistency you like, thinner or thicker. Garnish with grated cheese and corn chips.
