Serving tacos to my children and all their friends can get expensive, so this is a quick, easy way to make "pan tacos" which they love!

Ingredients
- 1 pound lean ground beef
- 1 can refried beans
- 1 can black beans
- 1 can diced tomatos
- 1 can diced jalapenos
- 4 cups cheddar cheese (or taco cheese if you prefer)
- 1 package corn tortillas
- 1 pint sour cream
- 1 package taco seasoning mix
- 1/2 - onion, diced
- - lettuce, onions, tomatoes, chips, salsa as desired

Step 1preheat oven to 350. prepare 9x13 pan with cooking spray

Step 2brown ground beef, drain, and mix both cans of beans, taco season mix, tomatoes,onions and jalapenos. cut corn tortillas to fit pan, and layer tortillas, ground beef mixture, and cheese, ending with the top covered with cheese

Step 3bake about 30 minutes or until top cheese is melted and bubbly. serve with other toppings and a dollop of sour cream.

Step 4EXTRA: If you have a few extra moments, cut remaining corn tortillas into thin strips, dip quickly into water, sprinkle with salt and lay out on sprayed cookie sheet and bake, to make crispy tortilla strips.
