My sister gave me this recipe many years ago. Whenever I go to a pot luck, people ask me to bring this recipe.

Ingredients

  • 1 lb. - chicken, boneless and skinless
  • 1 sm. can ounce 8 oz. can tomato sauce
  • 1 package taco seasoning mix
  • 1 can 14oz. chicken broth
  • 1 can corn, canned drained
  • 1 1/2 cups minute rice, uncooked
  • 1 1/2 cups mexican blend shredded cheese

How To Make taco chicken

  • Step 1
    Cut chicken breasts into cubes, cook in electric skillet or fry pan until cooked
  • Step 2
    Add chicken broth, taco seasoning, and tomato sauce, bring to a boil, add corn
  • Step 3
    Bring back to a boil, add Minute Rice and cheese, mix well. Turn off and let stand until liquid is absorbed. Serve with salad for a main dish.
  • Step 4
    You may also serve this as an appetizer with corn chips, salsa ans sour cream. Enjoy!
