Yum! We loved this creamy delicious casserole. It has a bit of heat which we enjoyed, but if that is too much for your taste buds cut back on the heat a bit by adjusting the jalapenos. Ingredients

  • 1 lb
    Velveeta cheese
  • 3
    jalapeno peppers, chopped
  • 1 1/2 pt
    sour cream
  • 1 can(s)
    Rotel tomatoes (10 oz.)
  • 1 can(s)
    tomatoes, diced (small can; 14.5 oz)
  • 1 1/2 lb
    ground chuck
  • 1 medium
    onion, chopped
  • 1 pkg
    taco seasoning mix
  • 1 pkg
    tortilla chips, plain

How to Make Taco Casserole Ole

Step-by-Step

  1. Brown ground chuck with onion in skillet; drain fat, return to skillet and add taco seasoning. Set aside.
  2. Melt cheese, sour cream, peppers and tomatoes in a saucepan over low heat until cheese is completely melted.
  3. Crush the chips. Combine the meat and cheese mixture. Layer meat/cheese mixture in 13"x9" baking dish; top with chips; repeat layers until all mixture has been used, ending with chips on top.
  4. Bake at 350 degrees until the top and sides are bubbly and slightly browned; approximately 30 minutes.
