Ingredients
- 5 cups yellow squash
- 1 - onions, small white
- 3 tablespoons ranch dressing pkt
- 10 - corn tortillas
- 1 pint sour cream
- 1/2 can cream of mushroom soup
- 1 package cheddar cheese, shredded
- - salt and pepper
- 1 - jalapeno peppers chopped
How To Make squash enchiladas

Step 1boil squash and onion until tender, add jalapeno drain off liquid add ranch seasoning, stir, add salt and pepper to taste soften corn tortillas in microwave place a few tsps of mixture on tortilla and sprinkle with cheese roll up and place in a greased 9x9 baking dish warm soup and add sour cream, ranch seasoning pour over rolled tortillas sprinkle with cheese bake at 325 for 15 min
