i got this recipe from one of my patient's family members. It was really good! Just something different.

    yellow squash
  • 1
    onions, small white
  • 3 Tbsp
    ranch dressing pkt
  • 10
    corn tortillas
  • 1 pt
    sour cream
  • 1/2 can(s)
    cream of mushroom soup
  • 1 pkg
    cheddar cheese, shredded
  • ·
    salt and pepper
  • 1
    jalapeno peppers chopped

How to Make squash enchiladas


  1. boil squash and onion until tender, add jalapeno
    drain off liquid add ranch seasoning, stir, add salt and pepper to taste
    soften corn tortillas in microwave
    place a few tsps of mixture on tortilla and sprinkle with cheese
    roll up and place in a greased 9x9 baking dish
    warm soup and add sour cream, ranch seasoning
    pour over rolled tortillas sprinkle with cheese
    bake at 325 for 15 min
