This is great on its own! My daughter and I love it with fried eggs. We also eat it with beans and burritos.

Ingredients

  • 4 - pablanos
  • 2 cups rice
  • 4 cups water
  • 1 pound bulk pork sausage
  • 1 medium yellow onions
  • 1 large can diced tomatoes
  • 1 tablespoon onion powder
  • 1 tablespoon garlic salt
  • 2 cups sharp cheddar or new velveta chipolte cheese, a cup
  • 1 cup sour cream
  • - optional canned corn and or black beansc

How To Make spicy spanish rice

  • Step 1
    Pop Pablano peppers in to oven and roast high for half an hour (until skin blisters). Place in a plastic bag to sweat off the skin. Put aside.
  • Step 2
    Brown sausage and put aside. For more flavor taco seasoning can be added.
  • Step 3
    In large pot, fry uncooked rice to a light brown. Add Water, Garlic Salt, Onion powder, diced onion, drained sausage, and diced tomatoes. Bring to boil, cover and simmer for 20 minutes.
  • Step 4
    After rice finishes, add Cheese, sour cream, and strips of Pablanos. Add any options at this time. Fold all together, don't mix with too much vigor to protect the texture.
