Ingredients
- 1/2 cup chopped onion (1 medium)
- 1/2 cup green bell pepper
- 1 - clove garlic, minced
- 1 tablespoon cooking oil
- 1 teaspoon chili powder
- 28 ounces can tomatoes, undrained and cut up
- 3/4 cup uncooked long grain rice
- 4 ounces can diced green chile peppers, undrained
- - *** several dashes bottled hot pepper sauce (optional)
- 1 cup water
- - salt and pepper
- 1/2 cup shredded cheddar cheese (optional)
How To Make spanish rice

Step 1In a large skillet cook onion, green pepper, and garlic in hot oil until tender. Add chili powder; cook 1 minute more. Stir in undrained tomatoes, rice, chile peppers, hot pepper sauce, 1 cup water, 1/4 teaspoon salt and 1/8 teaspoon pepper. Bring to a boil then reduce heat. Simmer covered for about 20 minutes or until rice is tender and liquid is absorbed. Put in serving dish and sprinkle with the cheddar cheese. If needed, put dish in micro for 1 1/2 mins to melt cheese.
