  • 1/4 c
    green onions,diced
  • 1
    jalapeno pepper,diced
  • 2 Tbsp
    unsalted butter
  • 8
    large eggs
  • 1/2 c
    skim milk
  • 1/2 tsp
    ground cumin
  • dash(es)
    kosher salt and black pepper to taste
  • 8
    8" soft flour tortillas
  • 12 oz
    shredded pepper jack cheese
  • 12 oz
    spicy tomato salsa, to taste
  • 1 c
    sour cream

How to Make Southwest Quesadilla


  1. Saute green onions and peppers with butter in a large frying pan. Whisk eggs with milk,cumin,salt and pepper in a bowl. Pour egg mixture over green onions and peppers and scramble gently. Ijn a separate 12" non-stick frying pan, melt a little butter and place one flour tortilla and 1 1/2 ounces of cheese. Add 1/4 of the cooked eggs. Cover with a second layer of cheese and cover with second tortilla. Cook 1 1/2 minutes per side or until golden brown. Remove from pan and spoon on salsa and sour cream.
